Home Made Sausage Rolls
You’ll wonder why you ever bought supermarket sausage rolls when you’ve tried homemade ones – there’s literally no comparison! They’re super easy to do, Miss Mini-Mumbler made her own for our VE Day Garden Party and we haven’t looked back! We follow the recipe on the box of ‘Jus’ Rol’ – yes I’m no pastry maker! There are six steps, it’ll take about ten minutes to prepare and twenty to cook but I promise, it’ll be worth it. You can find the recipe here.
Mini Quiches
Again another idea which you can just add any food you know your kids will eat! The Mini-Mumblers love Salmon and broccoli but who can beat a good old ham & cheese? You can make a batch ahead of time even freeze them! We love this BBC recipe and again when using ready to use pastry its a super quick lunch!
Pasta Salad
Pasta salad is always a hit with the mini-mumblers. I usually mix boiled pasta with tuna mayo, sweetcorn, grated cucumber and cherry tomatoes but you could stick anything in that you know they’ll eat. Other ideas we like are; pesto pasta and tomato and ham pasta. It’s a good idea if you’re making it for tea one night to make extra for lunches later that week.
Cous Cous Salad
We haven’t tried this as a school packed lunch but it went down brilliantly on one of our lockdown picnics! Stuff it full of fresh tomatoes, cucumber, sweetcorn and grated carrot and top with some deli ham or chicken!
Dips, Veg Sticks and Pitta Breads
Simply sliced veggies such as cucumber and carrot, breadsticks or cut up pittas and the kids favourite dips! The Mini-Mumblers will eat lots more variety of veggies when there are choices, this is the only way they will eat peppers and mini-corn! The favourite dips in this house are hummus, tzatziki, and guacamole but you can just choose whatever your family loves!
SWEET
We all know stuffing a bag of biscuits in will not go down well with the Schools Healthy Eating Plans but here are some alternatives which will give the kids the idea they are still getting a “treat”.
